honmirinHon mirin is made from mochi gome (mochi rice), kome kōji, and alcohol. In its finished state, it is about 14% alcohol and 40-50% sugars of various types. This combination of alcohol and sugars imparts a sweetness more refined than that from simple granulated sugar, makes food more attractive by producing glistening textures, improves flavor by adding umami and helping solids to structurally resist heat to keep flavors inside, and erases undesirable aromas.
