Expert Tips for Beautiful, Seasonal, Delectable Bentos
The best bentos are beautiful to behold and delicious. That means they’re also made with ingredients that are in season and at their flavorful peak. In Japan, autumn is the season of the rice harvest and meals prepared with the freshly harvested grains, called shinmai, are a culinary highlight of every year. In this class, participants will learn how to make onigiri, the triangular or round balls of rice Japanese often enjoy for lunch or at dinner, and seasonal dishes to accompany them. We will use shinmai for the onigiri and the side dishes will be specially selected to accentuate their flavor. We’ll also pass on tips for quickly making delicious bentos with shinmai prepared ahead of time and for choosing the bento box just right for your needs. Ogawa Maki will be our instructor. Ogawa-san has actively promoted bento-making internationally through newspaper and magazine articles, television appearances, and books published in English, French, and Korean. She is also now appearing as the co-host of the NHK World TV program, Bento Expo.
