
A healthy option for salad dressings, this tofu dressing is macrobiotic and can easily be a substitute for mayonnaise. You can also use this with meat and fish dishes.
【Ingredients】 (5 servings)
・ Cucumber (きゅうり / Kyuri)……1
・ Tomato (トマト / Tomahto)……1
・ Turnip (かぶ / Kabu)……1
・ Bell pepper (yellow) (パプリカ(黄) / Papurika (ki))……1/2
・ Red leaf lettuce (サニーレタス / Sunny letasu)……3 leaves
[Tofu dressing (豆腐ドレッシング / Tofu doreshingu]
・ Soft tofu (絹ごし豆腐/ Kinugoshi-dofu)……100g
・ Whole-grain mustard (粒マスタード / Tsubu masutado)……2tsp
・ Honey (はちみつ / Hachimitsu)……2tsp
・ Vinegar (酢/ Su)……1tbsp
・ Salt (塩/ Shio)……1/2tsp
・ Black pepper (ブラックペッパー / Burakku peppah)……To taste
・ Olive oil (オリーブオイル / Oreebu oiru)……2tbsp
【How to Make】
① Place the tofu into a bowl and use a whisk to turn it into a paste. Add the mustard, honey, vinegar, salt, and black pepper, and mix. Now, mix in the olive oil and allow the flavors to combine.
② Roughly skin the cucumber. Remove the stem from the tomato and rough cut the tomato. Skin the turnip and cut into bite-size pieces. Rough cut the bell pepper. Tear the lettuce into easy-to-eat portions.
③ Arrange the lettuce, cucumber, tomato, turnip, and bell pepper in bowl and apply the dressing.
