Summer Salad with Amazake Dressing

【Ingredients】 (5 servings)
・Tomatoes (Medium size) (トマト / Tomahto) ……..2
・Onions (Medium size) (玉ねぎ / Tamanegi) ……..1/4 (New onions are best)
・Cucumber (きゅうり / Kyūri) ……………………………..1
・Okra (おくら / Okura)……………………………………… 5
・Bell pepper (yellow) (パプリカ(黄) / Papurika (ki)).. 1/2

[Amazake Dressing]
Amazake (甘酒 / Amazake)…………………… 3tbsp
・Vinegar (酢 / Su) ………………………………….1tbsp
・Olive oil (オリーブオイル / Orēbu oiru) ……2tbsp
・Salt (塩/ Shio) ……………………………………..1tsp
・Black pepper (ブラックペーパー / Burakku peppah).. Pinch

【How to make】
① Remove the stems from the tomatoes and rough-cut them. Cut the onion into thin slices and give a quick rinse in water. Use a paper towel to pat dry. Skin the cucumber roughly, leaving skin here and there and rough-cut. Rough-cut the bell pepper into bite-size pieces.
② Remove the rough part of the stems from the okra. Bring some water to a boil, add a pinch of salt, and boil the okra for about 30sec. Place the okra in cold water. Drain the okra and slice in half diagonally.
③ Add the dressing ingredients to a mixing bowl and mix. Add the vegetables and give a quick mix. Keep in a refrigerator until you’re ready to eat.
