Nukadoko sets (kits) are sold in stores and have all the ingredients for making nukadoko. Typical ingredients include rice bran (komenuka 米ぬか), salt, and konbu or other sources of umami (or savoriness), but differ by manufacturer. The nukadoko sets used for the class include rice bran, salt, and shītake powder. The natural yeast paste (ten-nen kobo pēhsuto / 天然酵母ペースト) is mikan fermented with yeast.
