【Ingredients】 (6 servings)
Daikon (大根 / Daikon)……450 g
Shimeji mushrooms (しめじ / Shimeji)……1 bunch
Enoki mushrooms (えのき / Enoki)……1/2 bunch
Daikon sprouts (かいわれ大根 / Daikon sprouts)･･････1/4 package
Sugar (砂糖 / Satō)･･････1tbsp
Vinegar (酢/ Su)……2tbsp
Salt (塩/ Shio)……tsp2 /3
【How to Make】
① Skin and grate the daikon and then place the grated daikon into a sieve to drain off the excess water. Cut the hard bottom off of the shimeji mushroom bunch and then separate the bunch into smaller pieces. Cut the bottom off of the enoki mushroom bunch, cut the bunch in half crosswise, and then separate each half into smaller pieces. Cut the roots off of the daikon sprouts.
② Heat a frying pan over medium heat. Add the mushrooms and cook them until they soften.
③ Mix the sugar, vinegar, and salt in a bowl, and then add the grated daikon, shimeji mushrooms, and enoki mushrooms, and mix well. Serve in bowls and garnish with daikon sprouts.
