【Ingredients】 (5 Servings)
・ Shrimp with heads (有頭エビ/ Yutōebi)……5
Shiokoji (塩麹 / Shiokōji)……1tbsp
・ Water (水/Mizu)……1/2 cup

【How to Make】
① Use a bamboo skewer to devein the shrimp from their back sides. Rinse with water and blot dry. This will help the shrimp to absorb other flavors later.
② Add the shiokoji and water to a frying pan and bring to a boil. Add the shrimp, cover the frying pan, and steam over medium heat for 3 minutes.
③ When the shrimp are cool enough to handle, arrange on a plate.

【Significance as Osechi Ryori
Shrimp are an important part of osechi ryori, or New Year holiday dishes, because their long whiskers and curved shape, reminiscent of people who have achieved old age, symbolize the desire for long life.
