Ingredients for 4 Servings

Daikon (大根 / Daikon) 1/5 (about 200 g)
Preserved in amazake
Amazake (甘酒 / Amazake) 100 ml
Vinegar (酢/ Su) 1 tsp
Salt (塩/ Shio) 1 tsp
Cut konbu (切り昆布 / Kiri-konbu) 1 g
Red pepper (赤唐辛子 / Aka-tōhgarashi) 1 (seeded)

How to Make
1. Skin the daikon and cut it into thin rectangular slices.
2. Add the daikon, amazake, vinegar, salt, cut konbu, and red pepper to a plastic bag. Use your hand to massage the bag and mix the contents well. Set the bag aside for at least 10 minutes before serving.
