Tsuyu is dipping sauce for zaru udon, which is served with noodles on a plate and dipping sauces on the side.
Dipping Sauce (つけだれ / Tsukedare)
Men-tsuyu
Ingredients
Dashi-jiru (だし汁/ Dashi-jiru) 300 cc
Soy sauce (醤油 / Shōyu) 60 cc (4 tbsp)
Mirin (みりん / Mirin) 60 cc (4 tbsp)
How to Make
Add all of the ingredients to a pot and bring them to a boil.
Sesame Dipping Sauce (ごまだれ / Gomadare)
Ingredients
Ground pork (豚ひき肉 / Buta hikiniku) 100 g
Mirin (みりん / Mirin) 5 cc (1 tsp)
Sesame paste (ねりごま / Nerigoma) 50 g (3 tbsp) white
Ground sesame (すりごま / Surigoma) 1 tbsp
Men-tsuyu (めんつゆ / Men-tsuyu) 180 ml
Sesame oil (ごま油 / Goma-abura) To taste
Chili oil (ラー油 / Rāhyu) To taste
How to Make
1. Add the sesame oil to a frying pan and place the pan on medium heat. When the pan is hot, add the ground pork.
2. When the pork whitens, add the mirin. Let it bubble, then add the men-tsuyu. Lastly, add the sesame paste and mix well.
3. For spiciness, add a bit of chili oil.
