Ingredients for 1 Serving
Mirin (みりん / Mirin) 80 ml
Ginger (しょうが / Shōga) 25 g
Cinnamon stick (シナモンスティック / Shinamon sutikku) 1/4
Lemon juice (レモン果汁 / Remon kajū) 1 tsp
How to Make
1. Skin the ginger and then cut it into thin slices.
2. Add the mirin, ginger, and cinnamon stick to a pot and place the pot on medium heat. Let the liquid come to a boil then reduce the heat. Reduce the liquid to 2/3 of the original volume, then add the lemon juice. Bring the liquid come to a boil then turn off the heat.
When you use your mirin ginger cordial, dilute it by combining it with 3-4 times as much water. So, if you use 10 ml of cordial, add 30-40 ml of water. Also, the ginger slices themselves are quite tasty! Try them in English tea, in pound cake, or in yogurt. You can even eat them as is.
